First and foremost, we want celebrate James for his 20 years of service at Red Dog! He started on May 4th, 2001 and has been with us ever since. You're the best, James! Here's to another 20 years!

How To Make Ranch Water
 

There’s really no science to Ranch Water! Because it was a word-of-mouth cocktail for so long, it’s more about vibe than anything. Really, you can use as much lime, tequila, and soda water as you’d like. Keep those bubbles on hand to refresh your drink, when you need it. Here’s the art to making Ranch Water:

  • Place 2 shots of tequila in a glass (3 ounces).
  • Mix in the juice of 1 lime (that’s about 1 1/2 ounces).
  • Fill the glass with ice and top it off with Topo Chico (about 1/2 cup).

What tequila to use

The better the tequila, the better the drink! Ranch Water isn’t the most sophisticated of cocktails, so we wouldn’t require pulling out the top shelf stuff. Try finding a mid-price range tequila: typically this correlates to the quality of the alcohol. You can use either tequila blanco or tequila reposado here. Long considered a second-class citizen wine, Pais is finally being recognized for its unmistaken quality and structure.

New Italian Wines From Poderi Cellario!
 

Kevin brought these 2 fun wines in this week...here's a little background info on the winery:

Fausto and Cinzia Cellario are 3rd generation winemakers in the village of Carru` on the western outskirts of the Langhe. The family believes in only working with local, indigenous Piemontese grape varieties and fiercely defends local winemaking traditions both in the vineyard work and the cellar practices. Vineyard work is organic (soon to be certified) and all the fermentation take place with indigenous yeasts.

 

 

"il Baffone" Bianco Frizzante 19.99

 

The Baffone (means big mustache!) is a blend of nascetta (a rare native Piemontese variety with excellent skins for maceration) and moscato giallo vinified dry. The must was skin contact during primary fermentation (~5 days) in stainless steel before being bottled with conserved passito must to induce secondary fermentation; Cellario makes a small amount of late harvest wine and he uses these dried grapes to kick start the bottle fermentation.

"il Barrusco" Rosso Frizzante 19.99

 

The Barrusco (translates to something like 'rough and tumble') is a blend of Neretta (that rare native Piedmont variety prized for it's dark color and spicy tannins), barbera and dolcetto. Primary fermentation in stainless steel before refermentation in bottle.
